Domaine de la Janasse is built on a fragmented structure, with over sixty parcels spread across a mosaic of terroirs, each contributing a specific nuance to the wines produced. Thanks to in-depth studies of soils, exposure, and microclimates, each grape variety is planted optimally: white grapes and Syrah find their freshness on sandy-limestone soils facing northeast, while Mourvèdre, planted on clay-limestone soils covered with rolled pebbles, reaches ideal ripeness. This diversity of terroirs offers unparalleled complexity to the estate's blends. It also results in emblematic cuvées, such as Chaupin and Les Garrigues, two 100% Grenache wines cultivated on cooler terroirs that enhance their balance. On the warmer plots, Grenache is tempered by Mourvèdre and Syrah, creating generous, fine and harmonious wines, reflecting the richness of the La Janasse terroir.

Vinification and aging

Winemaking at Domaine de la Janasse is based on a meticulous selection of grapes. The harvest, which extends from the end of August to mid-October, includes a double sorting process: the first carried out by the pickers and the second, supervised by the Sabon family, guaranteeing grapes of optimal quality. This precise sorting determines the winemaking choices, such as the percentage of destemming and the maceration time, with each cuvée tailored to the characteristics of the harvest. To encourage the expression of the terroir, the estate employs cold pre-fermentation maceration and controls the temperature to obtain soft tannins and a balanced aromatic concentration. Aging begins soon after fermentation, with careful management of the oak. The Grenache grapes mature in large oak casks, while the Syrah and Mourvèdre are aged in barrels, promoting micro-oxygenation adapted to each grape variety. After 12 to 14 months in casks and barrels, the wines are blended, lightly clarified, and bottled in the spring, ready to reveal all the richness of the Janasse terroir.
