Vinification and aging

For this 2021 Premier Cru Champ Gain, the grapes are harvested by hand, ensuring rigorous selection. After gentle pressing, the juice is clarified before fermentation in oak barrels, some of which are new. Aging lasts approximately 12 months, allowing the wine to develop its complexity while preserving its freshness. This process, combined with meticulous attention to detail, results in a wine of great elegance, where the oak blends harmoniously with the fruit.
