Vinification and aging

Winemaking at Domaine Faiveley is a true art. The grapes, carefully hand-harvested, are destemmed before being vinified in wooden vats. Fermentation and maceration take place in a controlled environment, allowing for a gentle extraction of aromas and tannins. Aging occurs in oak barrels, some of which are new, for 12 to 18 months. This slow and delicate process contributes to the wine's complexity and richness, while preserving the purity of the fruit.
