The Terrasses du Larzac appellation is aptly named, as the vines are arranged in terraces. The altitude and exposure to the winds result in significant temperature variations between day and night, thus preserving the freshness of the wines.

Vinification and aging

Part of the aging process takes place in demi-muids (600-liter barrels).
