Owner and history

Château Dalem has a vineyard of about twenty hectares. The vines are on average 40 years old, on clay-limestone plateaus and hillsides.

Vinification and aging

- Hand-harvested grapes followed by mechanical sorting
- Malolactic fermentation in barrels
- Aged for 18 months in vats (50% new, 50% from one previous vintage)
