Vinification and aging

Winemaking at Domaine Faiveley is carried out with meticulous respect for Burgundian traditions. After hand-harvesting, the grapes are carefully sorted before being destemmed. Fermentation takes place in temperature-controlled tanks, allowing for a gentle extraction of tannins. Aging in oak barrels lasts between 12 and 18 months, depending on the vintage, enriching the wine with subtle nuances and aromatic complexity.
