Notes and pairings

Tasting notes

A deep, brilliant ruby-garnet robe. The nose, discreet yet seductive, reveals aromas of Morello cherry, raspberry, cocoa, eucalyptus, and a subtle touch of rose, all underpinned by a marked freshness. The palate unveils a complex mosaic of ethereal fruits, perfectly integrated with fine tannins, making it approachable even in its youth. Remarkable depth and intensity, supported by superb acidity, combine power and finesse. The seemingly endless finish concludes with an appealing saline note that naturally invites another glass.

Food & wine pairings

A lacquered duck with crispy, caramelized skin, served with hoisin sauce (slightly sweet and salty) and thin pancakes.

Ao Yun is located near the legendary and remote village of Shangri-La, in the foothills of the Himalayas. Its 27-hectare vineyard is divided into 727 plots situated on the banks of the Mekong River, within the UNESCO-protected Three Parallel Rivers area, and at the foot of the snow-capped Meili Mountains (6,800m). Each of the four villages is spread across complementary altitudes of 2,100m to 2,600m and boasts distinct soils, sun exposure, and microclimates.

Owner and history

Ao Yun, the first domaine Ao Yun, a Himalayan winery, was born from a dream that began in 2008: to create a unique, internationally renowned Chinese wine. Commissioned by Moët Hennessy, Dr. Tony Jordan embarked on a journey into the unknown and, after four years traversing the vast expanses of China, arrived in northern Yunnan, where he discovered a microclimate ideal for great Cabernet Sauvignon grapes. Now, the Ao Yun team, led by Maxence Dulou, General and Technical Director of the domaine, perpetuates this vision.

The team's opinion

The year 2022 in Yunnan was characterized by a climat contrasting. While spring was relatively dry, summer brought the necessary rainfall to nourish the vines before a bright and cool end to the season. This nighttime temperature variation, typical of high altitude, allowed for a deep color to develop and preserved a vibrant acidity, a signature of the domaine.
