    Vinification and aging

    The harvest, carried out by hand, began in the first days of September with the grapes from the youngest vines and continued with the Cabernet Sauvignon from the lower-altitude plots, finishing with those located on the hillside, more than 300 meters above sea level (Vigna di Castiglioncello). Harvesting operations were completed at the end of September. Yield per hectare: 30 to 35 quintals for the oldest vines, 60 to 70 for the younger ones.
