Vinification and aging

Winemaking at Château Durfort-Vivens It is a meticulous process that begins with the hand-harvesting of grapes at optimal ripeness. After gentle destemming, the grapes are fermented in stainless steel tanks, allowing for precise temperature control. Aging takes place in oak barrels, some of which are new, for 12 to 18 months.
