    Vinification and aging

    Winemaking at Domaine Arnoux-Lachaux is a meticulous process, blending tradition and innovation. The grapes are harvested by hand and carefully sorted to retain only the finest berries. Fermentation takes place in open vats, promoting a gentle extraction of tannins. Aging occurs in oak barrels, a percentage of which are new, to impart a subtle touch of wood to the final blend.
