Vinification and aging

The vinification of the 2020 Hermitage is carried out with meticulous care. The hand-harvested grapes are destemmed before being fermented in stainless steel tanks, allowing for a gentle extraction of tannins. After fermentation, the wine is aged in oak barrels, some of which are new, for a period that varies to impart complexity and roundness. This aging process, combined with regular racking, promotes the integration of aromas and the stability of the wine, while respecting the identity of the terroir.
