Vinification and aging

Winemaking at Château Haut-Brion is a meticulous process that begins with a rigorous selection of the grapes. After hand-harvesting, the bunches are destemmed and gently crushed. Fermentation takes place in temperature-controlled stainless steel tanks, allowing for precise temperature control. Aging occurs in oak barrels, a percentage of which are new, to impart complexity and structure to the wine.
