Vinification and aging

Winemaking at Château Ausone is a meticulous process, blending tradition and modernity. The grapes are carefully hand-sorted before being vinified in temperature-controlled tanks, allowing for gentle tannin extraction. Malolactic fermentation takes place in barrels, adding further complexity to the wine. Aging, which lasts approximately 18 months, occurs in oak barrels, some of which are new, to refine the wine while preserving its fruit. This attention to detail at each stage of winemaking guarantees the authentic expression of the terroir and the unique personality of each vintage.
