Vinification and aging

Winemaking at Domaine Yves Cuilleron It is a meticulous process that begins with the hand-harvesting of the grapes, guaranteeing their integrity. The grapes are then destemmed and placed in vats for natural fermentation, without the addition of commercial yeasts. Aging takes place in oak barrels, some of which are new, allowing for aromatic complexity while respecting the fruit. Each cuvée is then carefully blended before bottling, creating wines of great precision.
